SUPER EASY SALMON LOAF 
1 (15 oz.) can salmon, drained
3 tbsp. melted butter
3 lg. eggs, well beaten
6 saltine crackers, finely crumbled
3/4 c. buttermilk
1/2 tsp. baking soda

Preheat oven to 350 degrees. Grease a 1-quart loaf pan. In a bowl, with a fork, shred the salmon. Add butter and eggs. Mix until blended. Stir in crackers.

In a small glass cup, mix the buttermilk with the baking soda. Stir into the salmon mixture until blended. Spoon into pan and bake for 30 minutes or until set. Serves 4-5.
