GERMAN APPLE CAKE 
3 c. flour (all-purpose)
3 tsp. baking powder
1 tsp. salt
4 eggs
2 c. sugar
1 c. vegetable oil
1/2 c. orange juice
2 1/2 tsp. vanilla extract
4 c. apples (thinly sliced & peeled)
2 tsp. cinnamon
3 tbsp. sugar
Confectioners' sugar (optional)

Combine first 3 ingredients; set aside. In large bowl combine eggs and sugar. Combine oil and orange juice. Add to egg-sugar mixture. Add dry ingredients. Mix until smooth. Add vanilla. Beat well.

Pour half into greased and floured tube pan. Arrange half of apples. Sprinkle with sugar and cinnamon. Pour on top the rest of batter. Add apples, sugar and cinnamon. Bake at 350 degrees for 1 hour and 10 minutes or until done. Sprinkle confectioners' sugar on top.
