CHINESE RICE 
1/2 c. sliced green onions
3-4 ribs celery, sliced diagonally
Vegetable oil
1 lg. can (low-salt) Spam, cut in sm. pieces
Cooked rice
Soya sauce
2 eggs, beaten

Cook green onions, celery and Spam in small amount of vegetable oil. Add rice, a cup at a time, stirring in with meat and vegetables. Cook 2-3 minutes. Make a well in the center of the rice, making sure wok or heavy frying pan is very hot. Pour in beaten eggs. Pull cooked edges into rice in pieces and gently stir center. Sprinkle generously with soya sauce (about 1/4 cup, depending on taste). Cook 2-3 more minutes on medium heat. Serve immediately.

Shrimp or pork may be used in place of Spam. Chicken or beef may be used but does not flavor rice as well.
