CLAM CHOWDER | |
1/4 lb. salt pork or bacon, sliced 1 lg. onion, sliced 1/2 c. chopped green pepper 1/2 c. chopped celery 1/2 c. chopped carrots 1/8 tsp. ground thyme 3 c. cooked or canned tomatoes 1/2 c. chopped turnips 3 c. diced potatoes 3 c. water 1 tsp. salt 2 tbsp. chopped parsley 1 pt. clams and liquid Saute pork over low heat until soft and golden. Pour off all but 1 tablespoon fat. Add onion, pepper, and celery. Saute until golden brown. Add carrots, turnips, potatoes, salt, and water. Steam clams, then shuck. Chop hard parts of clams and add to soup with clam liquid. Chop soft parts of clams and reserve. Simmer, covered, over low heat for 30 minutes. Add soft part of clams, thyme, and tomatoes. Simmer for 10 minutes. Season to taste with salt and pepper. Sprinkle with chopped parsley. |
