VEGETABLE LASAGNE ROLL - UPS 
1 box lasagne noodles

FILLING:

2 c. chopped broccoli or 2 boxes frozen chopped spinach (thawed)
1 lb. ricotta cheese
1 lb. mozzarella cheese, grated
1 lb. mushrooms, sliced
1/2 c. chopped scallions
2 tsp. basil
1 1/2 tsp. oregano

SAUCE:

1 lg. can whole peeled tomatoes, chopped
1 can tomato paste
1 can tomato sauce
2 tbsp. basil
1 clove garlic, crushed
1 bay leaf
1/4 tsp. salt
Pepper to taste

Cook lasagne noodles according to directions. Mix sauce ingredients in saucepan and simmer 15 minutes. Combine filling ingredients in bowl and spread small amount on each lasagne noodle, roll them up. Spread some of the sauce in bottom of baking dish and place rolls seam side down in dish.

Pour remaining sauce over the rolls and cover with foil. Bake for 20 minutes at 350 degrees. Remove foil and bake an additional 20 more minutes. Serve with Parmesan cheese.
