VEGETABLE - TURKEY ROLLS 
1 c. water
1/2 tsp. salt
1 (16 oz.) pkg. broccoli cuts
1 c. Minute Rice
1 tsp. butter
4 tbsp. prepared mustard
4 turkey cutlets, pounded
1/3 c. mayonnaise
2 tbsp. grated Parmesan cheese
2 tbsp. milk
1 tsp. prepared mustard

(You may use beef instead of turkey.) Bring water, salt and broccoli cuts to a full boil in medium saucepan. Stir in rice and butter. Cover, remove from heat. Let stand 5 minutes. Fluff with fork.

Meanwhile, spread 1 tablespoon of the mustard onto each of the cutlets. Spoon about 1/3 cup of the vegetable-rice mixture onto the center of each cutlet. roll up and place seam side down in 13 x 9 inch baking dish. Spoon remaining vegetable-rice mixture around the rolls in dish.

Mix mayonnaise, cheese, milk and the 1 teaspoon mustard in small bowl. Spoon over turkey rolls. Cover with foil and bake at 350 degrees for 10 minutes. Uncover and bake 15 minutes longer. Makes 4 servings.
