VEGETABLE CURRIED RICE 
3 c. cooked rice (1 1/2 c. raw)
1 (3/4 lb.) pkg. French cut green beans, cooked crisp
1 onion, finely chopped
2 cloves garlic, minced
Curry powder
Olive oil
1 lg. can tomatoes
Raisins
1/2 c. chopped nuts (cashews or almonds)

Saute onions and garlic in 2 tablespoons olive oil until clear. Add 1 tablespoon curry powder, then mix into 3 cups cooked rice. Add 1 large can tomatoes, chopped, the green beans, about 1/3 cup of raisins. Mix well. Add the chopped nuts. Cook in covered casserole at 350 degrees for 40-45 minutes. Serves 5-6. Good with roasted chicken or lamb.
