TORTELLINI WITH RED PEPPER SAUCE 
8 oz. pkg. fresh or frozen cheese tortellini

SAUCE:

1 tbsp. olive or vegetable oil
3 lg. (3 cups) red bell peppers, chopped
1 tbsp. chopped onion
1 garlic clove, minced
1 c. chicken broth
1 tbsp. tomato paste
1 tsp. chopped fresh thyme or 1/2 tsp. thyme leaves
Dash hot pepper sauce

Cook tortellini to desired doneness as directed on package. Drain; rinse with hot water. Keep warm. In medium saucepan, heat oil. Saute red pepper, onion and garlic until tender, about 5 minutes. Add remaining sauce ingredients. Simmer 10 to 15 minutes or until thickened. In food processor with metal blade or blender container, process until smooth. Serve over cooked tortellini. Garnish with fresh thyme, if desired. 4 (1/2 cup) servings.
