Microwaved.
Rinse whole, or half fresh salmon (could be frozen defrosted). Place in a shallow baking dish. Place slices of lemon, squeezed a bit and onions if you like on the inside of the salmon. Place thin slices of lemon on the outside for looks. Pour a little white wine and lemon juice over the fish. Cover the dish with Saran Wrap, but leave a little opening for steam to escape.
Microwave for 4 or 5 minutes to 10 to 12 or longer depending on size. After the first 4 or 5 minutes I check every few minutes to see whether it's cooked though. Don't overcook.
Serve with lemon wedges or tartar sauce or sour cream and dill. (New potatoes or rice, crunchy bread, green vegetable or salad go well.)
