HAM CROQUETTES 
3 tbsp. butter
1/4 c. flour
3/4 c. milk
2 tsp. mustard
1 tsp. grated onion
2 1/2 c. coarsely ground cooked ham
2/3 c. dry bread crumbs
1 egg, beaten
2 tbsp. water
Cooking oil for frying

Melt butter; stir in flour. Add milk all at once, cook and stir until bubbly. cook and stir 2 minutes more. Remove from heat. Stir in mustard and onion. Add ground ham; mix well. Cover and chill thoroughly. Shape mixture into 10 balls.

Roll in bread crumbs, shape each ball into a cone. Dip into mixture of egg and water; roll again in crumbs. Chill. Fry in oil until golden brown 2 to 2 1/2 minutes. Drain, keep warm. Serve with cheese sauce or gravy if wanted.

Great for leftover ham.
