BAKED TURKEY OR CHICKEN
CROQUETTES
 
2 c. cooked minced chicken (grinder)
3 tbsp. flour
1 can (6 oz.) mushrooms, grind with chicken or turkey
1/4 tsp. onion powder
Few ground of pepper
1 tbsp. parsley flakes
Salt to taste
2 eggs
1 c. bread crumbs
1 tsp. poultry seasoning or 1/2 tsp. curry powder
1/4 c. butter
1 tsp. Worcestershire sauce

Melt butter blend in flour. Measure broth from mushrooms, add chicken broth or bouillon to make one cup. Add to butter and butter and stir until smooth and thick. Add onion powder, pepper, Worcestershire sauce (curry or poultry seasoning and parsley flakes). Salt to taste and bring to boil. Add minced onions and chicken or turkey, bring to a boil. Reduce heat. Add 1 egg at a time, stirring constantly.

Spread in shallow pan and chill until firm enough to handle. Shape in large balls, cones or squares. Roll in bread crumbs. Place on a greased baking sheet. Bake at 350 degrees for 20 minutes. Serve with chicken gravy or white sauce. Delicious with green peas and/or pimientos added to white sauce. Freezes well.
