GRILLED MARINATED CHICKEN AND
VEGETABLES
 
2 (6 oz.) chicken breasts, boned
1/2 c. Balsamic vinegar
1/2 c. olive oil
1 tbsp. honey
1 oz. sun dried tomatoes
1/2 bunch fresh basil, chopped

Marinate chicken 24 hours in remaining ingredients. Blanche sliced carrots, snow peas, broccoli, yellow squash, leeks and zucchini. Toss vegetables in warm butter. Slice and fan the chicken breasts over the warm vegetables and pour heated marinade over all.
