WHOLE WHEAT BATTER BREAD 
2 c. milk, scalded
1/2 c. butter
1 tsp. salt
1/2 c. honey
1 pkg. yeast
1 tsp. honey
1/4 c. warm water
3 c. whole wheat flour
4 lg. eggs, separated
1/2 tsp. baking soda

Pour scalded milk over butter, salt, and 1/2 cup honey. Let cool to lukewarm. Dissolve yeast in 1/4 cup warm water and teaspoon of honey. Stir into milk mixture. Stir in flour and egg yolks just until thoroughly moistened. Beat egg whites until very stiff. Sprinkle soda over beaten whites and gently fold into batter. Cover and let rise until doubled. Stir down and let rise again. Turn into 2 prepared loaf pans and let rise a third time. Bake at 350 degrees for 30-40 minutes.
