WEST INDIAN SOUSE 
4 pig feet, whole, washed & scrubbed
2 tbsp. pickling spice (3 tbsp. for extra spicy)
1/2 c. vinegar
1/8 c. hot sauce
1 bay leaf

Cook pig feet (stew) in plain water. Change water after 15 minutes. Continue to stew feet until almost tender, in vinegar water. (Add vinegar to fresh water.) To this add all ingredients. Stewing until done. Remove bay leaf; discard. Feet should be very tender, with about 1 cup water in pot. Pour all (feet and water) in bowl. Cool down before serving. Should be served cold.
