PUMPKIN PANCAKES 
1 c. flour
3/4 c. milk
1/2 c. canned pumpkin
1 tbsp. sugar
1 tsp. pumpkin pie spice
2 tbsp. vegetable oil
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 egg

Beat all ingredients together until smooth. Grease a heated griddle. Pour 1/4 cup batter for each pancake. Cook until browned on both sides. Serve with applesauce. 10-12 pancakes.

Tasty! Used 2 tbsp brown sugar instead of white. Didn't have pumpkin pie spice so I used 3 dashes cinnamon, 1 dash nutmeg. Yummy with maple syrup.

I've never made pumpkin pancakes before, but these were delicious. Very fluffy and tasty, but just a little too much pumpkin pie spice for me. Other than that, I will definitely make these again.
