2 c. sugar
2 eggs
1 1/2 c. oil
2 tsp. vanilla
3 c. apples, chopped
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt

Mix first 4 ingredients. Mix together the dry ingredients and stir together with the sugar mixture. Add apples. Pour into greased 13 x 9 x 2 inch pan. Bake 1 hour at 350 degrees. Check for doneness in middle.
