EASY CANDIED SWEET POTATOES 
4 sweet potatoes, quartered, cubed or sliced
1 c. brown sugar
Dash of salt
3/4 stick butter

Melt butter in saucepan. Add sweet potatoes, salt and top with brown sugar. Cover and cook on medium heat, stirring occasionally until tender, about 25 minutes.

VARIATION: Add 1 sliced fresh apple (i.e. McIntosh or Cortland) with the sweet potatoes. Then add 1/4 to 1/2 cup pecan halves just before serving to prevent the nuts from becoming soggy.
