EASY HAM AND PINEAPPLE WITH
BAKED SWEET POTATO
 
This is the tastiest quick dish I have created. It doesn't taste "fast" and it's very healthy.

This recipe is approximated, I use no measuring when I cook. So you may add or subtract amounts of any ingredient really to suit your taste. Unless you burn the dish, you can't really mess it up. I hope you enjoy as much as my family does.

2 1/2 cups cubed ham
1 (20 oz.) can pineapple chunks (reserve half liquid)
1 tbsp. butter
2 tbsp. brown sugar
4 sweet potatoes

Wash sweet potatoes and pierce with knife 3 or 4 times. See if your microwave has a baked potato setting. If not, microwave on high for 13 to 16 minutes.

While they are cooking, heat large pan over medium high heat. Add butter, drained pineapple and ham, cooking till nicely brown. Add brown sugar and 1/2 cup reserved pineapple juice. Simmer to reduced most liquid. Serve with sweet potatoes cut in half lengthwise adding a pat of butter and a pinch of salt.

Serves 4.
