OVEN FRIED CHICKEN 
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
1/2 c. shortening (half butter)
2 to 3 lbs. frying chicken, cut up

Heat oven to 425 degrees (hot). Mix flour, salt, pepper and paprika in bag. Put shortening in oblong pan (13 x 9 1/2 x 2), and set in oven to melt. Shake chicken to coat. Place chicken, skin side down in single layer in hot shortening.

Bake 30 minutes. Turn skin-side-up and bake another 30 minutes or until chicken is tender (4 servings).

For gravy: Add 2 teaspoons flour (saved from dredgings) to drippings in pan. Bring to boil. Add about 1 1/2 cups hot water. Boil 1 minute.
