THAI NOODLES WITH SPICY PEANUT
SAUCE
 
Noodle Prep.:

1 lb. linguine
1 sweet red pepper
2 carrots
1 bunch of scallions, diced, for garnish
sesame seeds for garnish

Cook linguine. Rinse, drain and toss with olive oil. Cut veggies into matchsticks or dice. Toss sauce with noodles and vegetables. Garnish with scallions and sesame seeds. Can be served hot or cold. (If serving hot, blanch veggies).

Sauce:

1/2 cup soy sauce
1 cup peanut butter, chunky or smooth
1/2 cup peach or orange jam or orange marmalade
2 cloves of garlic, chopped
crushed red pepper to taste, up to a tsp. or more

Mix sauce ingredients together until really smooth.
