SALAMI 
5 lbs. ground meat
2 1/2 tsp. cracked pepper corns
2 1/2 tsp. mustard seed
2 1/2 tsp. garlic salt
5 tsp. Morton Tender Quick salt (can use 2 tsp. seasoning salt & 3 tsp. quick salt)
2 tsp. Hickory Smoke salt

Mix well and refrigerate for three days. Form into 2 inch diameter logs, 2 long or 3 short. Place in broiler pan. Bake at 140 to 150 degrees for 6 to 8 hours. Turn over once.
