FA'AUSI ESI (SWEET BAKED PAPAYA) | |
1 lg. or 2 med. ripe papaya 1 1/2 lbs. flour 3 coconut Peel and remove seeds of papaya. Boil papaya with water in a medium size pot. When boil, drain water and save. Mix flour into papaya, adding the boiled water to make a stiff paste. Wrap pieces of the paste into the size of a tennis ball in banana leaves and bake in the umu or at 400 degrees for 20 minutes. Cut the cooked paste into cubes. Grate the coconut, pour a little boiling water over, and squeeze out the cream. Boil the cream until it bubbles up. Pour over the cubes and serve. |
