ZUCCHINI BREAD | |
3 eggs 1 c. oil 1 c. sugar 1 c. brown sugar 1 tbsp. maple extract 2 c. shredded zucchini 2 1/2 c. flour 1/2 c. wheatgerm 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 c. chopped nuts or sunflower seeds Mix eggs, oil, sugars and maple extract until thick and foamy. Mix in separate bowl, zucchini, wheat germ, baking soda, baking powder, salt and nuts/sunflower seeds. Pour into 2 greased and floured loaf pans. Bake approximately 45 minutes to 1 hour at 350 degrees (depending on your oven temperature). Cool for 10 minutes then turn out on a cooling rack. |
