PERFECT BROCCOLI CAULIFLOWER
CASSEROLE
 
My mom used to make this for every major holiday. It's simple and delish!

1 bag frozen broccoli/cauliflower medley
1 (10 oz.) can cream of mushroom soup
1 egg
1/2 cup mayonnaise
2 cups shredded cheddar cheese
1 can chopped water chestnuts (more or less to taste)
1 can French fried onions

Thaw frozen broccoli and cauliflower mix. Preheat oven to 350°F.

In mixing bowl combine cream of mushroom soup, egg and mayonnaise. Add cheddar cheese, water chestnuts, and thawed vegetables. Transfer mixture to 1 1/2 quart casserole dish and bake at 350°F for 45 minutes or until golden on top and bubbly. Sprinkle French fried onions on top and back for another 5 minutes.

Serves 6 as a side dish. I often double it for pot lucks or family gatherings.
