HAM AND POTATOES, CHANTILLY 
3 lg. potatoes, cooked & riced
1/4 c. hot milk
2 tbsp. butter
Salt & pepper
1/2 c. finely chopped ham
1/2 c. heavy cream
1 c. (1/4 lb.) shredded sharp Cheddar cheese
Paprika

Mix potato, milk, butter and seasonings to taste; beat until fluffy. Put in shallow 1 quart baking dish. Sprinkle with ham. Whip cream until stiff; fold in cheese and season to taste. Spread on potatoes. Sprinkle with paprika. Bake at 450 degrees for 15 minutes.
