CRAZY FRUIT UPSIDE-DOWN CAKE 
TOPPING:

2-3 cups chopped fruit (apples, blueberries, peaches, pears, pineapple or bananas)
1 tbsp. vegetable oil
1 tsp. cinnamon or nutmeg

Toss together fruit, oil and spice. Spoon mixture into an oiled 8-inch square casserole or baking dish.

CAKE:

2 eggs
1/2 cup vegetable oil
2 tbsp. milk
1/2 cup fruit juice (apple, pineapple or orange)
1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1 tsp. baking powder

Beat together eggs, oil, milk and fruit juice. Add flour, baking soda and baking powder. Beat well. Pour batter over fruit. Smooth evenly.

Bake at 350°F for 30 minutes. Cool until warm and turn out onto serving dish.

Serve plain or with ice cold milk or Cool Whip.

Serves 4 to 6.
