SUPREME CORNISH HENS 
2-4 Cornish hens
1/3 c. butter
1/3 c. white wine, Worcestershire or cooking sherry
Sweet basil leaves
1/3 c. honey
1/3 c. lemon juice
1 1/2 tbsp. sage
2 tbsp. garlic (optional)
Salt and pepper or Season Salt

Clean hens; season with salts and pepper, sage and garlic in an open roaster pan. Sprinkle basil leaves over hens. Melt butter, add lemon juice, Worcestershire sauce or sherry. Combine ingredients in a saucepan. Lightly glaze hens with sauce, place in oven.

Bake at 350 degrees for about 20 minutes; cover with foil, basting with sauce every 5-10 minutes. Remove foil after approximately 30-40 minutes. Baste with honey. Allow to turn golden brown and remove from oven.
