BAKED CORNISH HEN | |
4 (1 lb. size) cornish hens, thawed Dash of pepper and salt 1/4 c. butter SAUCE: 1/4 c. shredded orange peel 1 1/2 tbsp. shredded lemon peel 3/4 c. orange juice 2 tbsp. lemon juice 1 c. currant jelly 1/2 c. Madeira 1 tsp. dry mustard 1/2 tsp. ginger 1/4 tsp. salt Dash Tabasco Heat oven to 500 degrees. Sprinkle salt and pepper in hen cavities. Tie legs together, breast side up in shallow pan. Reduce oven to 400 degrees. Brush hen with butter. Roast for 15 minutes uncovered. Pour 1/2 cup water over hens. Turn hens, breast side down. Cover with foil and bake 30 minutes or until done. Make sauce and serve with hens. |
