SWEDISH COFFEE BREAD | |
3 3/4 c. milk, scalded 2 tbsp. dry yeast 10 1/2 c. flour 3/4 c. butter 1 c. sugar 2 eggs, well beaten 3/4 tsp. salt 1 1/2 tsp. almond extract 16 cardamon seeds, ground or 2 tsp. ground cardamon Add butter to scalded milk, cool to lukewarm. Mix 1/3 flour with all dry ingredients. Combine these 2, mix well. Add eggs and almond extract. Mix all of this with electric mixer. Have remaining flour in large bowl. Add the preceding mixture. Mix well. Let rise until double in bulk. Shape into desired rolls, coffee rolls, coffee rings, braids or whatever pleases you. This will make 5 good size braids. I brush the top of the formed dough with beaten egg whites. Then sprinkle with sugar and cover with sliced almonds. Cover and again let rise until double in bulk. Bake in a 375 degree oven for 20 minutes or until done. |
