DIABETIC ALMOND RAISIN COFFEE
CAKE
 
2 tbsp. chopped nuts
1 tbsp. brown Sugar Twin
1/2 tsp. cinnamon
1 c. all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1 1/2 c. Kellogg's nutri-grain cereal, any variety
1/4 c. Sugar Twin
3/4 c. unsweetened apple juice
1/4 c. vegetable oil
1/4 c. skim milk
1 egg, slightly beaten
1/2 tsp. vanilla

Combine first 3 ingredients in a bowl for topping and set aside.

Combine next 5 ingredients. In large mixing bowl; mix together cereal, Sugar Twin, applesauce, oil, milk, egg, and vanilla. Add flour mixture stirring until thoroughly combined. Spread batter in lightly greased 8 x 8 x 2 inch pan or round cake pan. Sprinkle with topping. Bake at 375 degrees for about 28 minutes or until wooden pick comes out clean.
