STREUSEL BANANA MUFFINS 
1/4 c. brown sugar
1/4 c. chopped nuts
1 tsp. cinnamon
1 c. mashed bananas
1/2 c. oil
1/3 c. milk
1 egg
1 tsp. vanilla
2 c. flour
1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/3 c. chopped nuts (optional)

For streusel, mix brown sugar, 1/4 c. chopped nuts and cinnamon; set aside. In separate bowl, mix flour, sugar, baking powder, salt and 1/3 c. chopped nuts; set aside. In third bowl, beat bananas, oil, milk, egg and vanilla. Add flour mixture all at once, stirring with spoon, until flour is just moistened. Batter will be lumpy. Divide batter evenly among muffin cups. Sprinkle with streusel mix.

Bake at 400°F approximately 15 minutes, or until toothpick comes out clean. Remove immediately and cool.
