CANDIED APPLES 
8 tbsp. butter
4 to 6 Delicious apples, cored but not peeled, cut into 6 wedges each
1 c. sugar

Melt butter in heavy saucepan over medium heat. Add apples, tossing and stirring to coat thoroughly. Sprinkle sugar on top of apples. Bring to simmer, stir gently, and lower heat. Stir occasionally, but do not mash or break up apples. Simmer very gently 30 minutes, spooning off excess juice as it bubbles up. Serve warm. Yield: 6 to 8 small servings.
