CRUNCHY SWEET POTATO SOUFFLE 
3 c. potatoes
1 c. sugar
1/2 tsp. salt
2 eggs
1/3 stick butter
1/3 c. milk
1 tsp. vanilla

Mix well, pour into baking dish and sprinkle with topping.

TOPPING:

1/3 c. flour
1 c. brown sugar
1 c. coconut
1 c. nuts, chopped

Mix well. Bake at 375 degrees for about 30 minutes. This recipe may be prepared and frozen, ready to bake when needed.
