MINTED GREEN PEA SALAD 
1 pkg. (10 oz.) frozen peas
3 tbsp. mayonnaise
1 tsp. lemon juice
1/2 tsp. sugar
1/4 tsp. fresh mint, chopped fine
1/8 tsp. salt
1/2 c. chopped celery
Lettuce leaves

Thaw peas in colander under running hot water. Set aside to drain. Blend mayonnaise, lemon juice, sugar, mint and salt. Chill before serving. Serve on lettuce leaves. 4 servings.

I have been searching for a minted pea salad for summer side dish. This one was easy, with all ingredients I already had on hand. Except for fresh mint, I used dried leaves. Hopefully will turn out well. I may cut the amount of mayo next time.
