PAUA WITH CREAM 
3 lb. paua, shelled
2 onions
3 tsp. corn flour
3/4 c. milk
1 pt. cream
1 oz. butter
Salt and pepper
Freshly ground nutmeg

Remove sac (pewa) and teeth from paua and slice very thinly. Melt butter in pan and saute chopped onion. Add sliced paua and toss quickly to saute. Add cream and heat but do not boil. Thicken with corn flour and milk as required and season to taste. Serve immediately on a bed of boiled rice and sprinkle nutmeg over.
