FLORENTINE ROLL-UPS 
1 pkg. lasagne noodles
4 c. cottage cheese (or ricotta)
2 c. shredded cheddar cheese
1 c. chopped fresh spinach
1/2 c. sliced green onions
1 egg
1/4 tsp. each salt & pepper
3 1/2 c. spaghetti sauce (with or without meat)

Cook lasagne according to package directions and lay noodles flat on foil to cool. Combine ingredients except sauce. Spread about 1/3 cup of mixture on each noodle, leaving about an inch on each end; roll up. Spread 1 cup sauce in bottom of 13 x 9 inch pan and place roll-ups, seam down, in pan. Top with remaining sauce. Cover and bake 40 minutes or until bubbly.
