ENCHILADAS | |
Salt and pepper to taste 1 lb. ground beef 3 lg. onions 1 sm. can tomato sauce 1 lb. Velveeta cheese 1 sm. can sliced olives 1 can Las Palmas sauce (sm. can) 2 hard boiled eggs Take ground beef and cook in small amount of oil until redness is gone. Chop onions and wash in water; add to beef with can of tomato sauce and can or can and 1/2 of water. Let simmer until onions are tender. Add chopped eggs and olives and half of cheese (chopped). If too thin, thicken with cornstarch. SAUCE FOR DIPPING TORTILLAS: 2 or 3 teaspoons flour and small amount of oil. Add can of Las Palmas sauce and can of water. Let thicken. Dip one side of tortilla in above sauce, then put in baking dish open. Put in filling and roll up. Keep in pan pushing together until pan is full. Slice remainder of cheese and put on top. Bake in 350 degree oven until cheese has melted or until hot. |
