ENCHILADA PIE 
1 lb. ground beef
1 onion, chopped
1 tsp. salt
1/4 tsp. pepper
1 (8 oz.) can Las Palmas enchilada sauce
6 corn tortillas
1 (4 1/2 oz.) can chopped olives
1 1/2 c. shredded cheese, Cheddar or Monterey Jack
1/2 c. water

Brown ground beef and onion, add seasonings and enchilada sauce. In a 2-quart casserole, alternate layers of tortillas, meat sauce, olives and cheese. Add water, cover and bake in a 400 degree oven for 20 minutes. Serves 4 to 6.
