MANDY'S SCRAMBLED UP 
1 medium potato, diced small (or 1/2 bag hash browns)
1/2 red or green pepper, diced
small tomato, diced
1/2 cup diced ham
pinch of salt and pepper
pinch of garlic powder
6 eggs
shredded cheese, for top (optional)

Fry potatoes in olive oil till browned. Add peppers, tomatoes, and ham. Season with salt, pepper and garlic. When cooked to your likeness add eggs. Scramble and enjoy! Or add a favorite shredded cheese to top off. I like to serve this with toast.

Serves 3.
