CAJUN SAUSAGE AND RICE 
1 (8 oz.) box red beans and rice mix
2 bell pepper, cut into bite size pieces
4 fully cooked spicy beef sausages, sliced
1 tsp. oil
scallions

Bring 3 1/2 c. water to boil in a large saucepan. Add rice mix; reduce heat, cover and simmer 10 minutes. Meanwhile, heat oil in a large nonstick skillet. Add peppers; sauté over high heat 5 minutes. Add sausage; sauté 3 minutes until lightly browned. Place mixture on rice (don't stir), cover and simmer 10 minutes until rice is tender. Stir to mix; sprinkle with scallions.
