CORN AND ZUCCHINI CASSEROLE 
3 slices bacon
2 tbsp. green or red pepper
1 tbsp. chopped onion
10 oz. pkg. frozen corn
2 sm. zucchini, sliced (about 2 c.)
1 c. (4 oz.) cubed pasteurized processed cheese
1/4 c. half & half
1/4 tsp. nutmeg

Arrange bacon in single layer in 1-quart microwave-safe casserole. Cover with paper towel. Microwave on high 2 1/2 to 3 minutes or until crisp, rotating dish once. Remove bacon and set aside.

Reserve 1 tablespoon drippings; discard remainder. Add corn to drippings, also zucchini, pepper and onion. Cover with casserole lid. Microwave on high 8 to 9 minutes or until vegetables are just about tender, stirring once. Stir in cheese, half & half and nutmeg; cover. Microwave on high 1 1/2 to 2 minutes or until cheese is melted, stirring once. Crumble bacon and sprinkle over vegetables. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
