FRIED ZUCCHINI STRIPS 
3 med. zucchini
1/2 tsp. salt
2 eggs, slightly beaten
1/2 c. vegetable oil
1/4 c. all-purpose flour
1/8 tsp. pepper
1 c. fine, dry bread crumbs

Cut zucchini into finger-size strips. Combine flour, salt, and pepper; mix well. Dredge zucchini in flour mixture; dip in egg, and coat with bread crumbs. Fry in hot 375 degree oil until golden brown. Drain on paper towels. Yield: 4 to 6 servings.
