FRENCH MINT PIES 
1 c. butter
2 c. powdered sugar
4 sq. melted chocolate
4 eggs
1 tsp. peppermint oil
2 tsp. vanilla
2 c. crushed vanilla wafers

Combine sugar and butter and beat until fluffy. Add melted chocolate and beat in a little at a time. Add eggs one at a time, beating after each. Add flavorings. Beat until you can't beat it anymore. Put cookie crumbs in bottom of 1/2 size baking cups or Dixie cups cut off. Add mint mixture and more crumbs or nuts on top. Refrigerate or put in freezer. Serve with whipped cream and cherry on top. (These are a candy, best directly from the refrigerator.)
