FRUITED CHEESE MOLD 
1 (3 oz.) lemon gelatin
1/2 c. boiling water
1 (16 oz.) can undrained pineapple chunks
1 tbsp. lemon juice
1 c. shredded Cheddar cheese
1 c. whipped cream or topping (such as Cool Whip)

Mix gelatin and boiling water. Add pineapple and lemon juice and chill. Fold in cheese and whipped cream topping. Refrigerate at least 1 hour before serving.
