SWEET CINNAMON QUICK BREAD
2 c. Pillsbury's best all-purpose or unbleached flour
4 tsp. baking powder
1 1/2 tsp. cinnamon
1 c. buttermilk
2 tsp. vanilla
1 c. sugar
1 1/4 tsp. salt
1/3 c. Mazola oil
2 eggs

STREUSEL:

2 tbsp. sugar
2 tsp. softened butter
1 tsp. cinnamon

Preheat oven to 350 degrees. Grease and flour bottom only of 9 x 5 inch loaf pan. Lightly spoon flour into measuring cup; level off. In large bowl, complete all bread ingredients; beat 3 minutes at medium speed. Pour batter into prepared pan.

In small bowl, combine all streusel ingredients until crumbly; sprinkle over batter and swirl lightly to marble. Bake at 350 degrees for 45 to 55 minutes or until toothpick inserted in center comes out clean. Remove from pan immediately. Cool completely before slicing. Wrap and refrigerate leftover bread. Makes 1 loaf.

TIPS: To substitute for buttermilk, use 1 tablespoon vinegar or lemon juice plus milk to make 1 cup.
