DELUXE MEAT LOAF 
2 med. stalks celery, chopped
1 med. onion, minced
1 med. carrot, minced
2 strips bacon, finely diced
1 can (3 or 4 oz.) mushrooms, diced
1 med. green pepper, minced
1/2 tsp. each monosodium, celery flakes, dry mustard, sage and salt
1/4 tsp. each garlic powder and pepper
1 tbsp. soy sauce
1 tbsp. Lea & Perrins
1 c. milk
2 eggs
1 c. dry bread crumbs
1 lb. lean beef, well ground

Combine all ingredients except beef, mix well. Let stand 30 minutes to 1 hour. Add beef, mix thoroughly. Spoon into greased 8x5x3 loaf pan. Bake at 350 degrees for 1 hour 15 minutes. If desired, top with 1 can (8 ounce) tomato sauce for last 15 minutes of baking time, or serve hot tomato sauce separately.
