DAVE'S SMOKED GOOSE 
1 whole goose, cleaned

Soak in baking soda, if you want. Stuff with apple, oranges, onions and put in a roasting pan. I use my gas grill with gas barely on and with lid down. Another tin or pie pan has hickory or other smoking wood inside. Soak the wood in water so it will smoke and not catch fire. This also keeps the goose, or duck, moist. Cook at low heat two or three hours until done. Goose will stay moist if wood is kept wet.
