Preheat oven to 425°F.

Toast 4 slices of bread. Place in the bottom (as a square) in roaster pan. Rub oil generously on turkey (20 pound).

Place breast side-down unstuffed on toast. Cook for 60-70 minutes.

Reduce oven temperature to 325°F. Remove hot turkey and very carefully stuff. Don't burn yourself. Place back in pan breast side up. Sprinkle lightly with granulated garlic, salt and pepper. Completely cover with foil.

Remove or peel back foil for browning during the last 30 minutes of roasting. Turkey is done when breast temperate reaches 159°F and temperature at leg is about 180°F. Juice will run clear (not pink).

Your directions are incorrect. We've all followed this recipe for years.
It's not 60 to 70 minutes it's 45 minutes then flip turkey.

Turkeys are bigger these days than they used to be! This one calls for a 20 pounder.
