GREEN CHILI CORN BREAD 
1 pkg. Jiffy corn bread mix
1 egg
1/2 c. 2% milk
1 sm. can corn, drained
2 tbsp. chopped pimiento
1 can chopped green chilies, drained
1/2 c. shredded lowfat cheese
1/2 tsp. paprika (optional)

Preheat oven to 350 degrees. In bowl beat egg lightly. Add milk and stir. Add all other ingredients. Stir until just moistened. Fill greased muffin tin to 2/3 full. Bake 15-20 minutes - or until toothpick comes out dry. Makes 8.

I substituted a can of cream corn and baked in a 9x9-inch greased pan. Increase bake time to 30 minutes. Yum!
