SWEET PICKLE CHUNKS | |
24 pickling cucumbers (3 to 4 inches) 1 tbsp. alum powder 8 c. sugar 4 c. vinegar 2 tbsp. mixed pickling spices 1 stick cinnamon, broken 1 tsp. whole cloves Sprinkle turmeric 1 piece candied ginger, diced Wash cucumbers. Cover with boiling water and let stand overnight. Drain and repeat for 3 days. Cut into chunks and let stand overnight with alum in enough cold water to cover. Drain and rinse. In separate pan, mix rest of ingredients together and heat to boiling. Pour over chunks and let stand another 3 days. On fourth day bring to a boil and put in canning jars. Process in canner for 10 minutes. All pickling should be done in stainless steel or glass. |
